I want a traditional wedding cake structure with cake pillars
seperating each tier. Can I have the entire cake made in sponge?
In this instance, having the middle and bottom tiers in sponge cake can create a few problems.
For example, if you look at your cake as a building, it needs solid foundations to stop it collapsing.
We always position plastic dowelling rods inside the cake to ensure stability, but with soft fudge
fillings combined with for example a hot day, no air conditioning, a bouncy marquee floor area!,
Traditionally structured wedding cakes with cake pillars separating each tier are recommended to be made out of fruit cake.
