What about an all sponge stacked style wedding cake? Is this possible?

We suggest the only way to stack an all sponge fudge/cream filled cake is to chill or freeze it. Unfortunately can’t chill or freeze traditional iced cakes finished in royal icing as during defrosting, the icing can simply disintegrate. If you are happy with a fudge finish inside and out, this style of wedding cake can be stacked, because it can be chilled or frozen.

Because we generously fill our sponge cakes with assorted fudge and cream fillings, they are obviously softer inside. Having just a thin layer of cream spread between each layer may make the cake more stable, but it would not be as moist, with that “melt in the mouth taste” we pride ourselves on. We don’t compromise with the inside of the cake, as the taste is as important as the look.
